Have you ever tried chocolate lava mug cake? Do you enjoy it? I certainly do.
In fact, you don’t have to go to a restaurant to have it. You can make it yourself at home.
You will find various recipes on the internet or in a cookbook, if that is what you prefer. I particularly love this recipe from pumpkinnspice(dot)com. You can check it out there and try it.
What I admire about this recipe is that it doesn’t call for eggs. Instead, you use coconut or vegetable oil.
It’s also perfect for one person. Unlike what the traditional method does, I prepare my cake in a bowl.
The ingredients include
- ¼ cup flour
- ½ teaspoon baking powder
- 2 tablespoons cocoa powder
- 3 tablespoons sugar
- Pinch of salt
- ¼ cup of milk (non-dairy is fine)
- 2 tablespoons of vegetable or melted coconut oil
- 1 teaspoon of vanilla
- 1 or 2 small squares of semisweet chocolate or 1 – 2 tablespoons of chocolate chips
I mix all the ingredients in the bowl and then microwave it for 30 seconds. Then I add the chocolate chunks or chips into the middle and heat it again for another 30 seconds.
After that, I let it sit for 2 minutes. Finally, I consume it.
You can eat it the way it is or pair it with other things, like ice cream, whipped cream, or berries.
Another benefit of chocolate lava mug cake is that it is quick. No preheating an oven and no baking necessary.
Most of the times I have made this, it has come out delicious. It is especially helpful when I have a throat filled with mucus.
Unfortunately, the last 2 times I made this, the cake came out dry, despite how I followed the recipe exactly.
Nevertheless, I would still recommend it. My one suggestion would be to perhaps use either a little extra oil or milk, or microwave for 15 seconds on the next round of heating. Maybe I will do that next time.
