I first discovered that I enjoyed these muffins when my mom baked them. Unlike those, however, I did not make mine from scratch.
Why, you may ask? It was because I woke up very early in the morning, before 4 AM. So, I didn’t want to wake anyone up in my house. I had a variety muffin mix in my pantry. Basically, you can add your own flavors while the flour and other basic ingredients are already added.
After blending the mix with water, which was all it needed, I added orange zest, orange juice, a little cinnamon, and fresh cranberries. Then I baked it and let it cool before consuming the muffins.
I actually made these muffins twice. The last time, I added the orange glaze to it. It consists of just orange juice and powdered sugar. The last ones I baked did not have the glaze, though.
But honestly, it tasted better without it. Both times, however, I constantly ate the muffins as they tasted that delicious, despite the slight artificial flavor. I also added a little bit of coconut sugar. While I could not taste it, my family could. I probably used less since the mix already had some sweetener.
Of course, homemade food is always better. So, at some point, I will prepare these muffins from scratch. They’ll likely taste better, as well.
